CPM-1V is known for having great toughness despite having a high hardness and very practical for all types of kitchen use. The blade has texture from forging plus a deep etched finish for a high contrast look between the laminated steels. The geometry is ground very thin at the edge but thicker spine displaying its hand forged nature.
