Ohishi Nashiji Hiraki 165mm



Ohishi Nashiji by Tadafusa. Forged from aogami (blue) #2 steel and cladded in stainless with a natural nashiji finish. The steel is rated at 62-63 hrc with great edge retention. Fitted with a macassar ebony hand and pakka wood ferrule.

These blades are a great example of quality at an affordable price. Highly recommended for those who have never tried high carbon steel before. I would classify this as more of a workhorse style blade that will hold up to all of your demanding kitchen tasks. 

Hiraki is a bit thicker at the spine used for filleting and butterflying fish. Hiraki knife is also known as kaisaki.
