Yoshikane

Yoshikane Hamono is located in Sanjo, Niigata and founded in 1919 and has been a legendary workshop producing some of Japan's best kitchen knives. Headed by 4th generation Kazuomi Yamamoto, this workshop produced extremely high performace kitchen knives produced mostly from SKD and White #2 steels. One of my personal daily drivers, these areloved for their effortless cutting feel and flatter edge shape. Highly recommended for knife nerds.
