Yu Kurosaki Fujin AS Gyuto 270mm

Located in Echizen, Yu Kurosaki forges high performance blades true to the tradition of his region but also incorporating new finishing techniques, creating some of the most unique and beautiful blades available.

This gyuto is hammer forged from blue super steel (aogami super) and cladded in stainless steel. The blade face is finished with kurouchi. Aogami super has a hardness rating at 63-64 HRC and has very long edge life. The handle is octagonal rosewood with pakka wood ferrule.
