The Tsunehisa SLD Santoku is a very well executed blade using Hitachi SLD steel. SLD is a high carbon stainless steel that has comparable sharpness and edge retention to blue carbon steel but is very stainless and easy to care for. The grind on these is super clean with convex bevels and very thin cutting edge. The handle is octagonal rosewood with a pakka ferrule.
