Matsubara Knives are produced by Fouth Generation Katsuo Tanaka located in Omura City, in the Nagasaki Prefecture of Japan. Passing on the traditions of his elders he not oly produces outstanding kitchen knives but also sickles and other tools. Matsubara knives are produced very traditionally and carries out all processes in house from laminating to sharpening. His knives have great heat treatment, unique forged geometry, and very tall profiles.
This series is made from Ginsan (silver #3) stainless steel laminated in soft stainless. Theblade is hand forged and left with a natural nashiji texture. These have a bit of a forged hollow above the shinogi that provides outstanding food release. Fitted with one piece lacquered oak handles.
