It works perfectly to showcase each ingredient in a dish. This konbu gives an umami pop in a subtle, elegant way. Uneno Co., Ltd. is a fourth generation konbu and katsuobushi company based in Kyoto. They provide hand-selected and aged Rishiri konbu harvested from the pristine waters off the far northern side of Hokkaido.
Their konbu farmer, Mr. Minami, has been farming konbu for 30 years just for Uneno-san.
