Yoshino Hon Kuzu (Kudzu) - Pure Japanese Arrowroot Powder
Yoshino Hon Kuzu is a starch made entirely from the root of kudzu plants (arrowroot) grown in Yoshino, Nara Prefecture. Kudzu powder is often used for making wagashi (Japanese confections) and thickening sauces. When kudzu powder is dissolved in water and the solution is heated, it turns transparent. Once the transparent mixture is cooled, it hardens and creates a smooth, jelly-like texture.
We recommend using it as a frying dredge or in place of a roux, similar to cornstarch. You can also dissolve it in warm water to thicken sauces or pie fillings.
