Made by Yamaki Jozo

Founded in 1902 in Saitama Prefecture outside of Tokyo, Yamaki Jozo is currently run by fifth generation Kitani-san and his siblings. They produce their traditionally brewed soy sauce using Japan grown whole soy beans, wheat, salt and water from a spring at the top of a local mountain.

These ingredients are used to produce the pride of the company - their 'soul' they say - the moromi (mash). This moromi is aged for two years in traditional cedar barrels. Their soy sauce is so highly regarded that it is presented annually to the Emperor of Japan.
