Kato AS Western Gyuto 210mm
Yoshimi Kato is a very talented bladesmith located in Echizen Japan, who works primarily from Takefu Knife Village
This series is made from aogami super steel (blue super) steel treated to 63-64 HRC and cladded in stainless. This knife is very thin behind the edge and has excellent edge retention. The western handle is made from a red and black pakka wood.
