Kota Knives
Dakota Thorton is a Denver based chef and part time bladesmith. As an avid Japanese knife collector and user, he has had long experience in the understandings of Japanese kitchen knife geometry and how they function. This experience he had gained through use, contributes to the designs in his knives.
This knife is made from Bohler Uddeholm Sandvik 19c27 Sweedish Stainless Steel, heat treated to 60-61hrc. This steel had great edge formation and sharpness while still maintaining great durability. The blade has been ground very thin and lightly convexed, sporting a s-grind to aid in food release and maximizing cutting feel. The blade is satin finished with polished choil and spine. The octagonal handle is made from oak and green dyed poplar burl.
