Definition Forge 52100/Pro-cut Damascus Chef 190mm

Elijah Durso-Sabina (Definition Forge) is a local Colorado maker who focuses on hand forged kitchen tools. Elijah is professionally a researcher in quantum error correction by day and tool maker after hours. He has been coming into our shop over the years sharing his creations, it's been a joy to see the evolution of his work over time.

This blade is a hand forged damascus made from high carbon Pro-cut and 52100 steels in a very deep layer pattern. The blade has a deep etch to display the layers in the steel. Medium bodied with very thin cutting edge gives a nice balance of feel and performance.  The core steel is hardened to ~65hrc. The handle is hand sculpted from African Blackwood.
