Definition Forge ProCut Walnut Gyuto 190mm

Elijah Durso-Sabina (Definition Forge) is a local Colorado maker who focuses on hand forged kitchen tools. Elijah is professionally a researcher in quantum error correction by day and tool maker after hours. He has been coming into our shop over the years sharing his creations, it's been a joy to see the evolution of his work over time.

This blade is a hand forged from ProCut high carbon steel heat treated to 67hrc. The blade has forged hollow geometry on the face to allow for excellent food release. Pop's ProCut is a specialized low allow carbon steel designed by Larrin Thomas of Knife Steel Nerds and Pop's Knife Supply. Released in 2025, it is known for balancing high toughness with superior edge retention. The handle is octagonal walnut and pakka wood ferrule.
