Kei Kobayashi is a young, Echizen based blacksmith and sharpener who has grown quickly in popularity for his high performance kitchen knives. This series is made using SG2/R2 powdered steel laminated in soft stainless. The blade is ground very thin for performance and the sides are lightly convexed for good food separation. The blade is fitted with an 7 sided red lacquered handle.
